Swai fillets with shredded cheese, sweet potatoes, cauliflower, and broccoli
Ingredients
- 4 Swai fillets
- 1 large sweet potato, peeled and cut into thin slices
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Directions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Place the Swai fillets in the prepared baking dish.
- Arrange the sweet potato slices, cauliflower florets, and broccoli florets around the Swai fillets in the baking dish.
- In a small bowl, mix together the melted butter, garlic powder, onion powder, salt, and pepper.
- Drizzle the butter mixture over the Swai fillets and vegetables in the baking dish.
- Sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
- Bake the dish in the preheated oven for 20-25 minutes, or until the Swai fillets are cooked through and the vegetables are tender.
- Remove the baking dish from the oven and let it cool for a few minutes.
- Garnish with fresh parsley, if desired, and serve hot.
