Swai fillets with shredded cheese, sweet potatoes, cauliflower, and broccoli

Ingredients

  • 4 Swai fillets
  • 1 large sweet potato, peeled and cut into thin slices
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Directions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Place the Swai fillets in the prepared baking dish.
  3. Arrange the sweet potato slices, cauliflower florets, and broccoli florets around the Swai fillets in the baking dish.
  4. In a small bowl, mix together the melted butter, garlic powder, onion powder, salt, and pepper.
  5. Drizzle the butter mixture over the Swai fillets and vegetables in the baking dish.
  6. Sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
  7. Bake the dish in the preheated oven for 20-25 minutes, or until the Swai fillets are cooked through and the vegetables are tender.
  8. Remove the baking dish from the oven and let it cool for a few minutes.
  9. Garnish with fresh parsley, if desired, and serve hot.
